In a mixing bowl, mash the banana until smooth. Add the egg, milk, sea moss gel, and maple syrup, then whisk well.
Add oat flour, baking powder, and cinnamon. Mix until a smooth pancake batter forms. Let it rest for 2 to 3 minutes.
Heat a nonstick pan over medium heat and lightly grease it with butter or coconut oil. Pour small rounds of batter and cook until bubbles appear. Flip and cook until golden.
In a blender, add frozen acai or berries, banana, sea moss gel, yogurt, and milk. Blend until smooth and creamy.
Arrange pancakes in a shallow bowl. Spoon berry-sea moss blend around or over the pancakes.
Top with strawberries, kiwi, coconut flakes, seeds, nuts, and a drizzle of maple syrup. Serve immediately.
Notes
- Sea moss gel has a very mild taste, so it blends well into the berry layer without overpowering the bowl.
- For a thicker berry blend, use less milk. For a smoother and lighter texture, add a little more milk.
- Top with your favorite fruit, granola, or nut butter for extra texture and flavor.
